The Art of the Asado: How La Barra Taught Us to Slow Down

Some places hand you a highlight reel. A list of things to do, see, check off, and photograph before you leave.

La Barra, Uruguay is not one of those places. What it gave our family over three months with Boundless Life was a slower, quieter way of being present. And it started, almost immediately, with fire.

One of the first things we experienced in Uruguay was the South American asado, the beloved grilling tradition shared across Uruguay, Chile, and Argentina.

Our initiation began almost immediately. We landed in Montevideo in the morning, groggy and excited, and by the same evening, Jean was already coaxing a fire to life in the grill of our new apartment, with all of the families in attendance.

Of course, to most North Americans, "firing up the grill" means turning a knob on a gas barbecue or, at most, lighting a handful of charcoal. But an asado is something entirely different. It starts with real firewood logs that crackle and blaze before slowly transforming into glowing embers. Those embers are the heart of the asado.

You build the fire on one side of the parrilla, tending it until the coals are just right, then gently slide them under the grate to create zones of heat for the meat. Everything about it is deliberate, unhurried, and rooted in tradition.

Because of that, an asado is never just a meal. It is an event, an all-day gathering meant to be shared with friends, family, and anyone who happens to wander by.

Our weeks in La Barra fell easily into this rhythm. Almost every weekend, we gathered for an asado. The kids splashed in the heated pool or played in the hub's kids' room while the adults lingered near the grill or around the table, talking about everything and nothing, often with a glass of local Tannat in hand.

My favorite little sanctuary in La Barra ended up being the walking path that winds along the beach. What started as a simple way home after dropping our son off at the Education Center quickly turned into a daily ritual for Jean and me. Instead of heading straight back, we always chose "the long way", a beautifully rustic path that hugs the coastline for miles.

Every morning, the beach showed us a different mood. Some days the ocean was silky and calm, almost like it was still waking up. Other days the waves rolled in strong and steady, perfect for the surfers already out there catching early rides. The path itself is wonderfully simple, sometimes soft sand, sometimes a weathered wooden boardwalk. It naturally slowed us down and invited us to breathe a little deeper, to notice the tiny moments we might've missed otherwise.

It was the easiest part of the day to fall in love with.

One of the nicest parts of having a surf ECA in La Barra was watching what happened to the kids over time. They started their lessons while it still felt warm, easing into the ocean gradually. By the end of the cohort, they were so completely hooked that they'd sprint toward the waves and dive right in without a second thought about the temperature. They were too excited to care.

One of the things you may be able to tell from all of this is that La Barra taught us how to slow down and enjoy the time we had. It was not a rush to see all the different sights or check off the travel list, but a slow enjoyment of the environment, the people, and the culture.

The asado, we came to understand, was never just about the food. It was a way of seeing time differently — as something to tend, not spend. Something to gather people around. The weeks in La Barra had that same quality. Unhurried. Deliberate. Rooted.

We didn't know we needed that until we had it. And we didn't know how much we'd miss it until we left.
